Dramatic in appearance with a wonderful golden hue, Kenbishi Zuishou “Alchemy” is a masterclass in aged sake. Kenbishi have been ageing and blending sake for hundreds of years; at any one time they have around 300 large tanks of sake ageing, waiting to be blended into one of their signature expressions. Alchemy is the most matured expression Kenbishi release, a blend of sakes from 5+ years old (some as old a two decades).
Kenbishi Zuishou “Alchemy” uses only 100% TokuA Yamada Nishiki (the very best Yamada Nishiki from the very best fields) and the maturity allows deep, rich, complex, sumptuous flavours & aromas to evolve. Chocolate, caramel, butter, wood, nuts and dried fruits are but a few; all matched with a velvety texture and long, luxurious finish. Alchemy is an approachable koshu (aged sake) from the masters of ageing (check out our other koshu expressions here).
Alchemy works excellently as a dessert sake or paired with bold flavours. Food pairings include mature / blue cheese with truffle honey, game, fois gras, roasted nuts, pickles and Christmas pudding!
Another idea is to serve Alchemy instead of dessert or – as was suggested by the President of Kenbishi – with a cigar.
