Noguchi Naohiko-Toji is famed for many things, one of which is championing the revival of the Yamahai brewing technique after the end of the Second World War. NNSI Gohyakumangoku 2018 Vintage is part of a series of sakes commemorating these efforts, with this particular sake looking to show the layered depth and complexity the Yamahai Technique is celebrated for.
Gohyakumangoku, Japan’s second most popular sake-brewing rice (after Yamada Nishiki) is one of its most important. Developed in Niigata Prefecture to cope with Niigata’s cold winters and resultant short growing season it tends to produce focused and clean style sake; however, in the hands of Noguchi-Toji it is used, with great effect, to give precise layers of flavour and umami. Combined with the in-bottle maturation of this namazake (unpasteurised sake) it results in the complexity & juicy depth Noguchi-Toji was aiming for.
Pale yellow in colour with a medium-intense, rich and lively aroma of plum, orange zest, chocolate, peach, banana and nuts, NNSI Gohyakumangoku 2018 Vintage takes the drinker on a journey of brewing excellence. Complex and layered fruit cake & dark chocolate flavours with real depth; a spicy & round texture with juicy acidity and a long, moreish finish are all expertly combined and integrated into this wonderful sake. This is a sake to savour and explore.
With such depth of flavour and ample umami it is no surprise this sake is amazing enjoyed warm. It pairs superbly with mature cheeses, curry, spices, creamy sauces (think sour cream, guacamole), fatty meats and other big & bold flavours. Also fabulous with mince pies & Christmas pudding!
