Shirayuki Classic Junmai is a traditional style sake with a nostalgic profile reminiscent of the styles of sake popular during the Showa Period (1926-1989, Japan’s boom years). Interestingly enough, this sake is made using Koji spores sealed in a time capsule since the 1920s. In 1970 (for the Osaka EXPO) Konishi Shuzo dug up the time capsule, found the Koji was still viable and used this to recreate this authentic taste from the Showa Period.
Inviting aromas of bread, cooked rice, creamy banana, cooked pear, brown sugar with supporting melon, molasses, leather and white pepper on the finish. Medium-bodied with a grainy texture – that smooths if heated – leading to dark sugar and banana bread flavours. Well-balanced and integrated, this is an easy-drinking sake that drinks well chilled or warm.
A good and tasty all-rounder that, whilst it may lack the finesse of some modern sakes, is well-crafted, well-balanced, hits the spot and is at an affordable price point. Shirayuki Classic does not disappoint and works well with a range of foods including cream cheese, yakitori/robata, roast chicken, BBQ, paté, hams, crème brûlée, cauliflower cheese and sweeter vegetables (carrots, parsnips, etc.).
