Tatenokawa Kyuryu “Stream Red” (NB – used to be called Tatenokawa 33 “3 Peaks”) is a spectacular sake. Using the famous, local Dewasansan rice and highly polishing it to 33% allows an elegant sake to emerge, and the brewers at Tatenokawa then tease out delicate fruit aromas and flavours of green melon, pineapple, watermelon and subtle stoned fruits like apricot and prune.
Gently pressed and bottled young, to retain its youthful character, Tatenokawa Kyuryu “Stream Red” is light-bodied with superbly balanced acidity, a silky impact and clean finish. It is neat, direct and wine-like in drinking style – best, therefore, enjoyed in a white wine glass.
You can enjoy this wonderful sake on its own but Tatenokawa Kyuryu “Stream Red” also offers superb pairing options. Ceviche, tartare, salads, meat robata, game, foie gras, sashimi, ceviche, oysters, mature cheeses and pates all are delicious.
To our mind the optimum temperature is 5-10°C, here you get a beautifully expressive nose and delicate, elegant texture. Colder results in a crisper and slightly drier sake.
